With beautiful fresh eggs piling up from my sweet new hens, I was inspired to find some new baking recipes fit for Spring'.
I thought lemons and zucchini would be a wonderful combination so I decided to try a recipe I found on Pinterest from Lil Luna
Glazed Lemon and Zucchini Bread
This was delicious!.. a great way to sneak in extra vegetables too.
Next time I make it I will try with coconut oil and throw in a handful of Chia seeds . ( cause I always love adding chia to everything!)
Enjoy some major lemony goodness with warm glaze dripping off the sides…. Ooh Yes !
